Cherry Oatmeal Tart

I really like the way a tart looks – Perfect, Elegant in looks and oh so delicious ! Cherry Oatmeal Tart is a quick, healthy & simple ingredient tart which will make you very happy to bake and eat.

I love all kinds in this genre – Pie, tarts, flan, Quiches. I am sure I did give you a hint of the same when i shared my No-bake lemony-mango Cheesecake recipe on the blog.

For me, sometimes the biggest challenge is to make dishes without eggs. I have given savory Quiche a couple of times and is yet to strike my pot of gold there ! The quiche tends to remain runny even after a good hour’s bake. I still haven’t lost hope and i am sure i will get it there soon.

With the same spirit, I thought of trying a custard tart. I have made custard many times before and know that it thickens on cooling. That certainly infused me with some good motivation and hope.

For the base, I went a little un-conventional and tried a oatmeal biscuit base. Not only is it interesting, it tends to get all crunchy after baking and sets a real contrast with the soft custard filling. The topping is the cherry on the cake, LITERALLY ! The home made jam/jelly topping made this dish completely healthy and very satisfying.

Cherry Oatmeal Tart sets a great example for a healthy & great looking dessert. It has the goodness of Oatmeal, Soya Milk and Cherry – Things cannot get better 🙂

Cherry Oatmeal tart

This dessert has 3 components to it :

  • Oatmeal biscuit base
  • Custard filling
  • Fruity cherry jelly

Oatmeal Biscuit Base

  • 1.5 cups oats. You can also use muesli if u like
  • 3-4 tsp all purpose flour
  • 3 tsp granulated sugar
  • 3 tsp honey/maple syrup/golden syrup
  • 2 tsp peanut butter. You can make a chocolate flavor by adding 2 tsp cocoa powder+50gms melted butter instead of peanut butter.
  • pinch of salt
  • few drops of vanilla extract

Custard Filling

  • 300 ml milk/soya milk (full fat milk/skim milk)
  • 2 tsp custard powder – vanilla flavored
  • 1/4 cup sugar or as desired
  • 1 ripe banana – mashed
  • 2 tsp all purpose flour
  • pinch of cinnamon powder
  • a few drops of vanilla extract

Fruity Cherry Jelly

You can go the Jelly route or make a jam like consistency as desired.

  • 100gms cherry : de-seeded
  • 1/4 cup water
  • 3 tsp sugar
  • 1 packet gelatin (about 3oz) – only if u want a cherry jelly.

Method

We will start the process with making the Fruity Cherry Jelly.

  1. In a saucepan, pour in the water and boil. Now to this, add the sugar and stir till the sugar dissolves. Lower the flame.
  2. Now to this, add in the de-seeded cherries. Mix in well and cover with lid. Cook on low flame for 15 minutes or till the cherry gets soft. With the help of a spoon, mash the cherries. The Fruity Cherry Jam is ready.
  3. If u desire to make this into a Jelly, add in the gelatin powder to a clean bowl and add 2 spoons of boiling water. Mix and dissolve the gelatin powder well. Add this to the cherry jam mixture and mix nicely.
  4. Let it cool down to room temperature and refrigerate for about 1/2 hr. Fruity Cherry Jelly is ready.

For the base and the filling

  1. Pre-heat the oven to 350F and keep ready.
  2. In a mixing bowl, take all the ingredients for the Oatmeal biscuit base and mix well till it forms a dough like consistency.
  3. In a spring form pan, spread the oatmeal biscuit dough on the surface to create a biscuit base.
  4. Bake it in the oven for 10-15 minutes till the base sets a little bit. Do not over bake as it will be baked for about 20-30 minutes once the filling is poured in.
  5. While the biscuit base is in the oven, take another sauce pan. Add the milk, sugar and the custard powder. Mix well and bring to boil. Remove from flame.
  6. Now to this, add in the all purpose flour, vanilla extract, cinnamon powder and the mashed banana (banana will help with the binding, moisture and getting a rich texture). Mix nicely till there are no lumps in the filling mixture.
  7. Remove the spring form pan with the oatmeal biscuit base out from the oven and pour in the custard filling. Bake for about 30 minutes or till the custard gets baked and is set.
  8. Remove from oven and let the tart cool down completely. Refrigerate till serving.
  9. For Serving, take the pie out from the refrigerator. Top it with the Cherry jelly, maybe sprinkle some grated chocolate, cut into slices and serve cold. For a playful element, crush the jelly with hands and sprinkle on top for that artistic appeal (the way i did, as seen in the pic).

This tart is sumptuous feast for your taste buds and a delight for the eyes. The base is crunchy and biscuity, the center is soft, sweet and comforting and the jelly is the fruity punch making this a very desirable combination. This tart is a light dessert (though it does not look like one, right?). The peanut butter flavor adds an aromatic element to the dessert and works really well against the fruitiness of the cherry jelly. Enjoy !
