Banana Oatmeal – breakfast Slice

It is said that one should eat breakfast like a king. A king would love a cake for breakfast right? But is’nt that just too royal ? Well when the cake tastes just like a big, healhty bowl of oatmeal with banana chunks compressed into decadent cake slices… why not? DSB presents the heavenly, healthy Banana Oatmeal breakfast Slice

Oatmeal is a regular breakfast item at my place. If not for that, i make the continental regulars like Pancake (check my apple- banana pancake recipe here), Crepes (check my crepes varieties – Crunchy crepe coins, ratatouille crepes and Savory crepes) and bagels (sun dried tomato bagel). Obviously then there are Indian options like the poha (check my bread poha recipe here), idlis (masala idlis), dosas or other bread items. Even after having such a huge variety to choose from, one (especially a person like me :P) gets bored and needs something new.

The constraints are as usual : low fat, low sugar but highly nutritious and filling. When i hear this combination of words, my mind interprets it as “wow, time for a new challenge”. This time, i wanted to create something which was usually not associated with breakfast menu but had the same nutritional value. The wheels of my brain started churning in inspiration of some ideas.

Often inspirations are sitting right in front of us but we fail to recognize them unless under certain circumstances. This time the brain wave occurred during my recent trip to Edmonton to meet some friends. We were staying at a hotel which did not offer us breakfast and we had to rely on the near by Tim Hortons (famous cafe chain across Canada). They have rows of delicious treats stacked neatly to grab along with a steaming hot cup of coffee. The downside though is that everything in site is “sweet” except the bagels. I was not in mood for bagel and i ended up ordering a muffin. The Muffin was sinfully delicious and i wondered if my body could afford to eat one everyday for breakfast. In order to gather the proof, i ended up checking online. As i read the calories and sugar i just consumed for something which could hardly be counted as a breakfast quantity, i was surprised and taken aback. I knew that i was not having that muffin for breakfast again… but the thought lingered on and the challenge of making that “healthy/low butter/low sugar” got onto me.

After 2 trials of making it better, here i present to you my uber healthy breakfast slice – with cups full of oats , dates, Bananas and All spice .. it is everything wise and super nice !

Banana Oatmeal Breakfast Slice

Recipe

  • 3 ripe bananas
  • 2 cups instant oats (old fashioned oats or rolled oats)
  • 1/2 cup all purpose flour
  • 1/2 cup chopped walnuts
  • 1 cup milk (u can also use coconut milk, almond milk, soy milk or water)
  • 100 gms butter/ palm oil/ ghee
  • 300 gms pitted dates, roughly chopped (or use can also use 1/2 cup sugar)
  • 1/2 tsp cinnamon powder/ All spice
  • 1 tsp baking powder
  • 1 tsp soda bi carb

Method

  1. Pre-heat the oven at 400 F and keep ready to bake
  2. We will begin with mixing the dry ingredients first. Take a bowl and to it, sieve the all purpose flour, cinnamon powder/ all spice, baking powder and soda-bi-carb. Mix well and keep aside.
  3. In a separate bowl, add the butter, milk, chopped dates and mashed bananas. Mix well and microwave for 3 minutes on high. The dates will pulverize and get mixed with the mixture.
  4. Next, add in the oats to this mixture and then microwave for another 2 minutes. The oats will get cooked with the mixture and form a sticky base. This will help in making the cake extra moist.
  5. Now, we will combine both the dry and the wet mixes and make the cake mix. For this, start by adding a little quantity of wet mixture to the dry mix and gently fold in so that no lumps are formed. Create a homogenous batter mixture. Note : Do not whisk the mixture or else the cake will not come out fluffy post baking.
  6. Check for the consistency of the Cake batter. It should be of “Dropping consistency”. You may add a little more water if required. Add the walnuts into the batter at this moment. You may also just put the walnuts on top of the batter after pouring on the tin so that the walnuts give a little crunchy texture on top.
  7. Pour the batter in the Cake tin and put to bake in the oven. The cake should take approximately 40 minutes.
  8. You must check the status of the cake in 20 minutes to ensure that the cake is baking evenly from all sides.  Check with a tester (fork/pin) if the cake is baked. To check, insert the tester in the center of the cake. The cake is baked when the tester comes out clean.
  9. Remove from oven and let it cool a little on a cooling rack. Once cool, cut into thin slices and enjoy with your evening coffee!!

This cake is simple, fuss free and the real healthy deal. With so little butter and no un-natural sugars, this is an ideal way of baking a cake and eating it too… that too, for breakfast !!

    • Hi Madhurima,

      It seems i missed out on writing the direction as to when to add the walnuts. Please add the walnuts after the dry and wet ingredients have been well incorporated and u are about to pour the batter in the greased tin for baking. Hope that helps

    Which brand oats do you use for this recipe? I don’t know the difference between old fashioned n rolled oats!!

    • Hi Priyanka,

      I shall begin with saying that Old fashioned Oats and Rolled oats is the same thing. It is just 2 sets of nomenclature used across various countries. I generally use instant (or 1 min cook) oats for my recipes. U can take any oats really and follow the cooking instructions on its package. I would suggest that u cook the oats in milk + water the way it is instructed and then once the oats are ready and sticky in texture, you can add in the other wet ingredients in it and proceed with the recipe. If the oats are already cooked before hand, they will mix with the mashed banana very effortlessly and give a nice overall flavour.
