Aloo Kofta – Potato croquettes in spicy tomato gravy

This recipe is a quick crowd pleaser. It is hassle free, easy to follow and is packed with amazing flavours. Well there is a reason for it, it is made with Potatoes off course ! Who doesn’t love potatoes. It is by far the most versatile ingredient used all across the world for both savory and sweet dishes. Today, i am bringing to you a dish which brings out a very comforting flavour in potatoes with this Aloo/ Potato Koftas !

Koftas are vegetable or meat balls which are traditionally fried and then dunked in a tomato gravy. Koftas for me have always been a luxurious meal which i loved enjoying with pipping hot pooris as a child. My mother would usually make koftas with various “healthy” vegetables sneaked into them and then give me pooris as an incentive so that i would happily eat them. That trick always worked with me and i started loving the combination of koftas with pooris.

Today, i am creating the same magic my mom creates with one of my favorite ingredient, Potatoes ! My take – Made Koftas a notch healthy by roasting them in Appe pan! Read on the recipe.

Aloo Kofta/Potato croquettes in spicy tomato gravy

Ingredients

For the Potato Balls

  • 2 medium sized potatoes, boiled and mashed
  • 1/2 cup corn, frozen
  • 1-2 green chilies, finely chopped
  • 1/2 cup fresh coriander leaves
  • 1 inch ginger, grated
  • 1 tablespoon corn starch/ corn flour
  • salt to taste
  • 1/2 tsp garam masala
  • 1/2 tsp red chili powder
  • 2 tsp oil for cooking the koftas *

* We would be using Aebleskiver / Appe pan for this recipe.

For the Gravy

  • 1 tablespoon oil
  • 1/2 tsp cumin seeds
  • pinch of asafoetida
  • 1 medium onion, finely chopped
  • 2 tomatoes, finely chopped / grated (You can also add in 1 tablespoon of tomato paste if you want a bright color and thicker consistency for the kofta gravy)
  • salt to taste
  • 1/2 tsp red chili powder
  • 1/2 tsp dry mango powder
  • 1/2 tsp garam masala
  • 1 tsp grounded coriander seeds

Method

  • Take a mixing bowl. In this, add in all the ingredients ( except the oil) for the potato balls and mash everything* together with hands or using a masher. Stick it in the refrigerator for about half an hour. This will firm up the mixture a bit. * You can also create a variation by keeping the mashed potatoes separate from the peas and stuff the peas inside the potato balls too !
  • After the resting time, remove the potato mixture from the refrigerator and now form them into small balls.
  • Roast these potato balls in the Appe pan using just a few drops of oil.
  • Roast evenly all the sides and remove the Potato balls from the appe pan once golden brown. Repeat with all the potato mixture. Keep aside.
  • Now, let us prepare the gravy for making the koftas. In a pan, add in oil. Bring to heat. Once hot, add in asafoetida and cumin seeds. Let the seeds splutter. Now, add in chopped onion and fry till golden brown. Next, add in tomato and spices. Let the tomatoes cook and thicken up on medium flame. Add in water as per the consistency required for the koftas. I wanted a semi thick gravy style for this dish hence i have not added water in this dish.
  • Add in potato balls and toss in the gravy. Let it cook on low flame for 10-12 minutes. The Potato koftas are ready.

These Koftas are so delightful ! Served these with pipping hot Spinach pooris (recipe coming soon) and the meal served us with all the warmth and love we needed on that breezy, rainy afternoon. Aloo koftas are exciting by themselves and when they are served along with pooris, the meal is made extra special. Make this dish soon and enjoy a yummilicious meal ! 🙂
