Family Style Cinnamon Chai Roll

With baking high on my head these days, I am back to churning out my own breads and trying out some new recipes. I have been looking at ways to create healthy alternatives to my breakfast staple. Today, a traditional sweet breakfast item gets a sugar free touch ! Presenting Family Style Cinnamon Chai Roll.

I have loved Cinnamon rolls for as long as I can recollect. There is something so comforting about them. I absolutely love the aroma and flavor of cinnamon and if I can get my cinnamon sugar rush right in the morning, my day is made ! Even though I feel that cinnamon rolls have way too much sugar for me to handle sometimes, I often end up picking them from our nearby bakery.

With my baking mitten on these days, I decided to try baking my own cinnamon rolls at home and I had the perfect idea !!

We are a bunch of Chai tea people at my place and we love cinnamon rolls with a hot cup of Masala Chai (with Tea Spice Mix). With that flavour combination pairing well for us, I really wanted to try a Chai Spiced Cinnamon roll. Since I like low sugar bakery items better, I wanted to create my version of Cinnamon rolls with far less sugar and a prominent taste of cinnamon and spices. This is the first time i was making Cinnamon rolls and was pretty excited but felt it was challenging too.

Usually when i am baking something new, i try to stick to the conventional recipe but this time, i wanted to take my chance. I am glad i did ! For making it more fun, i thought of making a giant cinnamon roll instead of individual portions so that the whole family can enjoy it together ! Have a look at the recipe.

Family Style Cinnamon Chai Roll – Sugar Free

Family Style Cinnamon Chai Roll

Cinnamon chai roll This Cinnamon Chai Roll is made using Joseph’s Maltitol Sweetener. You might have to tweak the proportions a bit if you are using some other sweetener.

Ingredients

Bread dough
  • All purpose Flour- 2 cups
  • dry active yeast- 1 tsp
  • Whole Milk- 1/2 cup
  • water-1/2 cup, lukewarm
  • dash of salt
  • Maltitol Syrup- 2 tablespoon
  • unsalted butter-2 tablespoon , melted
  • Extra flour for rolling out
Cinnamon filling

(Unlike the usual filling which uses sugar and is somewhat dry, this filling would be more like a paste)

  • cinnamon powder- 1 tablespoon
  • Chai spice- 2 tsp (you can use store bought or make your own by grinding 2 cloves, 3 cardamon, 2 peppercorns, 1/2 tsp dry ginger powder)
  • Maltitol Syrup- 2 tablespoon
  • cocoa powder– 2 tablespoon
Top Glaze
  • white chocolate- 1/2 cup
  • Whole milk- 1/2 cup
  • Maltitol syrup- 1 tablespoon

Method

We will begin with preparing the dough for the Cinnamon Chai rolls. I have used my Stand mixer for the recipe but you can knead the dough in a food processor or by hands too.

  1. Begin with proofing the yeast. For that, add in Maltitol syrup in the lukewarm water. Mix well. Next, sprinkle the yeast on top and gently mix. Let this stand for about 10 minutes or till the yeast foams up.
  2. Now, in a bowl, mix in the flour with the salt. Add in the yeast mixture, melted butter and using the dough hook attachment, start combing all in the stand mixer. I like to mix the ingredients on speed 2.
  3. Slowly start adding in the milk to the flour till it starts to come together into a dough. You will have to see how much milk to add depending on the consistency of the dough. Adjust accordingly.
  4. Knead the dough on speed 2 for about 3-4 minutes till it all comes together nicely and forms a soft dough ball.
  5. Transfer to a pre-greased bowl and cover with a cling film. Place the bowl in a warm but dark spot (i like to keep it inside a cupboard or microwave). Leave it for about an hour or till the dough rises to double the quantity.

  1. Meanwhile, prepare the filling. Combine all the ingredients mentioned for filling together and mix well till the filling is homogeneous. Keep aside till required.
  2. Once the dough has risen to double, remove the cling film. Punch it down and take it out on a clean, floured surface.cinnamon roll set
  3. Using a rolling pin, roll out the dough into a rectangle of about 1/4 inch thickness. Sprinkle some flour on top of the dough to roll it out easily.
  4. Now, spoon out the filling onto the rectangular dough and spread evenly, leaving /2 inch space on all 4 sides.
  5. Using both your hands, tightly roll the dough into a log. Some of the filling might ooze out, but do not worry.
  6. Now, gently lift the dough log and place one end in the center of a pre-greased baking tray. Using both your hands, quickly spin the log around its end to form a tight spiral. Place a kitchen towel on top of the roll. Let it rest and rise for another half hour. The Cinnamon roll will rise and increase in size. Do not rush the process. Good rise ensures a soft bread.
  7. Meanwhile pre-heat the oven at 375 F and keep ready.
  8. When the oven is hot, bake the cinnamon chai roll for about 30-35 minutes. Place the roll on the middle rack of the oven for an even baking.
  9. Once done and the crust has a light golden brown color, remove from the oven and cool it on a cooling rack.
  10. For the top glaze, just mix white chocolate with milk and microwave on high for 30-35 seconds. Mix well till homogeneous.
  11. Serve slightly warm with top glaze drizzle along with hot chocolate or coffee.

This recipe uses no sugar at all !

This one giant Cinnamon Chai roll serves 6-8 people and used only 1/3 rd cup of Maltitol syrup. Now, that’s promising. The syrup was pretty easy to work this and did not interfere with the look or taste of the cinnamon roll. The only little change was that the filling was more like a paste which needed some care while rolling but it was worth it. Taste was almost like the typical Cinnamon rolls minus all the crazy sugar. It is comforting, delicious and can be enjoyed guilt free.
