I love pizzas and i am always looking out at ways to make them often. This time, i ran out of pizza base so some wheat tortillas came to my rescue and in turn gave me this amazing dish ! What started as a Quesadilla, turned into a heavenly, crunchy, Green Goodness Pizzadilla ! Read on… u are in for a pleasant surprise dish !
We love Pizzas at my place ! If i ever ask my husband what he would like to eat for a meal, he has just one reply “PIZZA PLEASE!”. So much for our devotion 🙂
I keep Pizza baking a weekend affair as i assume pizza to be a tad bit tedious than my everyday cooking of lentils, chapatis and vegetable stir fry. Usually it is made from scratch (Yes i am one of those who loves to bake her base too) and thus a 10 mins meal ends up taking a good 3 hours for me. I try and par- bake a couple of bases in advance which i freeze and then thaw when i need to use them. That way, i can whip up some when i need them on a short notice!
This time, i did not want to go the usual route and thought of making a cheese stuffed pizza base. As exciting as the idea was, i did not want to go the long routine of making my own pizza dough. I was looking for something simple, mess free and easy to put together. Frantically, i opened my fridge for ideas and there, on my lower shelf was my savior – Tortillas ! I had just bought myself some tortillas that morning in pursuit of making some quesadillas the following night and i had completely forgotten about them. Since i had already made my promise of bringing pizza to the table, i just converted the tortillas to this gorgeous, hearty PIZZADILLA ! Check out the recipe .. its YUM
P.S – As i know, the basic Quesadilla is cheese stuffed in the tortilla and grilled. Hence, the basic Quesadillas can easily be converted into cheese stuffed pizza base 🙂

Recipe
This dish is made up of 3 different components
- The Pizza Base
- The tomato sauce
- The toppings
The ingredients required are :
The Pizza Base
- 2 large (14″-16″) whole wheat flour Tortillas
- Handful of grated cheese (Mozarrella/ cheddar/ swiss – as per preference)
The Tomato Sauce
- 2 medium sized tomatoes
- 1 small onion, finely chopped
- 2 cloves of garlic
- Salt and Pepper to taste
- pinch of dry oregano leaves
- 1 tablespoon oil
The Toppings – You can be your own creative self here and choose just about any topping (just make sure they do not require too much time in cooking). Below are some topping i used for this pizzadilla
- 1 zucchini, cut into thin discs
- 1/2 cup bell peppers (i used green and red bell peppers), cut into juliene
- 1 cup spinach
- 5-6 Baby corn – slit lengthwise
- 1/2 avocado, cut into thin slices
- 10-12 olives, cut into 2
- 50 gms grated cheese (Mozarrella/ cheddar/ swiss – as per preference)
- Salt and Pepper to taste
Method
- We begin with preparing the tomato sauce. I roasted the tomatoes on fire (with the skin on) before making the sauce more flavourful but u can omit the roasting step. Once roasted, the tomatoes will get soft and mushy. Roughly mash and keep aside.
- Take a pan. To it, add in oil and bring to heat. Add in the onions, garlic and saute on medium high till the onions turn translucent.
- Next, add in the mashed tomatoes, salt, pepper and oregano and mix well. Cook on medium high for 7-10 minutes. The tomato sauce is ready.
- Now, preheat the oven at 375F and keep ready.
- For assembly, begin with taking 1 tortilla. To this, spread the cheese on top and place the second tortilla on top of it. Slightly press the top tortilla by hands. Put this in the oven for about 5 minutes till the cheese melts and binds the 2 tortillas together.
- Remove the tortilla from the oven and keep aside. Now, we will begin with placing the toppings on the tortilla pizza base.
- For assembly, spread a generous amount of tomato sauce on top of the tortilla pizza base.
- Next, place the vegetables on top of the tortilla base. Spread grated cheese on top and sprinkle salt & pepper on top.
- Bake the pizzadilla in oven for 12-15 minutes till the cheese melts and the tortilla starts to brown on the edge. The Green Goodness Pizzadilla is ready.
This is a super crunchy crust pizza which is loaded with the goodness of hearty vegetables and handful of cheese giving these Quesadilla a whole new life. My husband loves thin crust pizza and this turned out to be a perfect choice. The cheese melted inside the 2 layers of tortillas, joining them and forming a stuffed base.. what a delight ! Make it yourself and enjoy some Italian flavours with a Mexican spin !
