Cinco de Mayo vegetarian collection

Cinco de Mayo is tomorrow and this is my quick last minute compilation of some of my favorite Mexican dishes, most of which have been “vegetarianised” so that i can share them with my readers here and we can celebrate in full spirits ! Feliz Cinco de mayo !!

For those who are new to Cinco de Mayo and are wondering why is Facebook, Twitter, Pinterest and the whole food blog community going crazy about it, well  Cinco de Mayo (spanish for “5th of May”) is a holiday that recognizes the victory of the Mexican army over the French army on May 5, 1862, at the Battle of Puebla. As i read, contrary to popular belief , it is not a Mexican holiday and is infact not that important in Mexico but mainly celebrated only in the state of Puebla. In the United States, though, Cinco de Mayo has become an important annual celebration of Mexican culture and heritage. In areas of the country with large Mexican-American populations, it is celebrated in full swing. People of all backgrounds celebrate the holiday with parades, parties, and traditional Mexican music, dancing, and foods.Interesting eh !

Well whatever the reason might be, this is a great way for people to get together, enjoy good food and have fun. To join in the celebrations, i have compiled a list of my favorite Mexican dishes. Some of these have been kept traditional whereas some have been tweaked to make them vegetarian. Just because you don’t eat meat, doesn’t mean you get just the guac and chips ! So, check out the list and make some of these tomorrow !
