Yesterday i went to farmer’s market and got hold of a pound of freshly picked blueberries. The succulent, gorgeous blueberries were saying “pick me up” and i knew i absolutely had to make some breakfast with them. Off course what is better than some instant Blueberry Pancakes with syrup on top… YUMMY ! Presenting my breakfast special Blueberry Pancakes.
Pancakes are my family’s favorite and we can have pancakes all day long. My husband actually loves to go to “All day breakfast” places where he can order his big stack of pancakes and enjoy them with a big fat pat of butter and syrup.. well who wouldn’t 😛 I personally love the blueberry pancakes and that is what i order every time.
So, when i got up today morning, i knew i wanted my morning kick from blueberries. The first idea was obviously pancakes and when i asked my husband about his opinion, he gave me the biggest ever nod in approval. Always a great feeling when i get the menu approval in one go 🙂
I decided to make these pancakes using whole wheat flour. WW flour is denser to work with but provides much more fiber to the meal which seemed like a great route to take. I also wanted to try incorporate Oatmeal with my pancakes to make them into a truly breakfast treat and so i took my chances and went ahead with my idea. Check out the recipe below !!
Breakfast Special Blueberry Pancakes
Breakfast Special Blueberry Pancakes
Ingredients
- Whole wheat flour- 2/3 cup
- oatmeal flour – 1/3 cup
- milk- 1/2 cup
- greek yogurt- 1/2 cup
- sugar- 2 tablespoons
- pinch of salt
- dash of vanilla essence (you can also use almond extract)
- fresh blueberries- 1 cup
- baking powder- 1/2 tsp
- soda bi carb- 1/2 tsp
- butter for roasting the pancakes- 2 tsp
Serving accompaniment
- Butter as desired
- Syrup / Maple syrup / Caramel sauce
- Jam/ jelly or compote of choice
Method
- Take a bowl. In it sieve in all the dry ingredients (except sugar) and mix well.
- In a separate bowl, mix vanilla essence, sugar, milk and yogurt together.
- Slowly add the liquid mix to the dry mix and whisk together to form a smooth batter. Try to avoid lumps in the batter.
- Now, take a skillet and heat it up. pour a ladle of the batter on the hot skillet and add little butter on the sides. Drop in some blueberries on top of the batter while it is still firming up. Roast on each sides till light golden on both sides.
- Once done, remove and stack up on a plate. Serve with butter and syrup/ jam/jelly.
So, what do the pictures tell you ?
These pancakes were crazy good !! The blueberries really tasted fresh and the pancakes were light and fluffy, just the way they should be. The Greek yogurt does a great job to provide a slight tanginess to the batter and make them lighter. I served them with just a slight butter smear and syrup for my husband and no syrup but a small sprinkle of vanilla sugar for myself.
They were just so delicious, it was a painful to keep my patience intact and click pictures for this post.. but i absolutely had to. These are such good pancakes that i was more than eager to share the recipe with you guys 🙂 So, don’t keep waiting…just make them already !! Have fun 🙂
