It’s International Pi Day !! A day originally meant to be celebrated by Mathematicians has been food lover’s favorite for many years now. We love our pies and get to celebrate it on this fun day !! Today Divine Spice Box is sharing some of their favorite pies (sweet and savory) from its recipe box and enjoying a slice or two 🙂 Happy Pi Day !

Pi(e) Day was officially celebrated for the first time in 1988 in San Francisco by a physicist Larry Shaw and it has since been observed in many ways. This includes eating pies, throwing pies and discussing the significance of the number Ď€, due to a pun based on the words “pi” and “pie” being homophones in English. Interesting eh !

Whatever be your reason for celebration, i know that pies make everyone happy ! Not that we need a reason to bake and eat a pie.. foodies all around the world adapted to the day and made it its own by celebrating with PIES ! So, let us join in the fun and enjoy a pie or two ourselves. Here are some delicious ideas for you to create your own pie and celebrate 🙂

1. CINNAMON OATS TART WITH DARK CHOCOLATE GANACHE – Vegan/ Gluten Free

Cinnamon scented oats tart with dark chocolate ganacheChocolate and pies go hand in hand and this one is a classic chocolate pie made extra special with an oats crust scented with cinnamon. This dessert is a burst of flavours. The dark chocolate in combination with a kick of cinnamon brings out a sophisticated flavour profile in this dish. Not only that, the long list of health benefits of dark chocolate, oats and cinnamon makes this dessert  “truly irresistible!” What’s better ? This pie (in small portions) can also be enjoyed by diabetic patients as well.

2. BLUEBERRY MINI HAND PIES

Blueberry Hand PieHand pies are easy and you can make them fancy or just keep them clean and simple like this blueberry hand pies. I love to bake individual pies and this one really fits the bill for a summer pie ! Blueberries are going to be in season soon.. so bookmark this one and give it a go ! My fav combination with this one is homemade vanilla ice cream. For a variation, add a few dashes of cinnamon in the dough.

3. APPLE PIE HAND PIES

We love apple pies in our family and though i love to make the big pie, these individual bites come in handy when you want to take it along on picnics.

4. KESAR KAAJU GUJIYA/ SAFFRON CASHEW FUDGE STUFFED HAND PIES

Kesar Kaaaju Gujiya/ Saffrom Cashew fudge stuffed hand pieTaking inspirations from a famous fried Indian pie, this pie is crispy to core and has a very unusual stuffing prepared with cashews, coconut and aromatics.. If you want to try something apart from fruit pies, this is a winner !! This one is very close to my heart and it is my mother’s favorite 🙂

5. ONION LEEK MUSHROOM GALETTE

This one keeps making rounds on my blog all the time and it is still one of my most loved savory pie ! This one is not only delicious but pretty low on calories. There is one secret ingredient in the pastry dough which keeps the pastry crunchy and light but makes it guilt free to enjoy ! Go crazy with onions, mushrooms and peppers in this pie and make sure to bake a big one… coz your friends will keep coming back for seconds.

6. FRESH FRUIT CUSTARD CREAM CHEESE TART

With no baking involved, this dessert is perfect for brunches as it makes for a beautiful, edible center piece and is definitely a conversation starter. The best part is that it falls partially in the “fancy dessert” category without you having to slog on making it look good. What else can one ask for?

7. VEGETARIAN MEXICAN LASAGNA

This recipe uses only store bought sauces and ingredients and its your creativity which makes it into an interesting fusion lasagna. This dish is a perfect example of “easy steps meet gorgeous food”. This lasagna is delicious to core and the tortillas does an amazing job of substituting pasta sheets.  Try it out for yourself

8. NO BAKE LEMONY MANGO CHEESECAKE

Lemon Mango Cheesecake - no BakeCheesecakes are absolutely delicious and they certainly deserve a spot on this list. This one is a no bake Lemony -Mango Cheesecake. The lemon freshness and flavor really compliments the sweet richness of fresh mango puree and gives an element of zing to this lovely cheesecake. Enough said. Make this already 🙂
