Carrot Berry Smoothie

Second in the series of Smoothies, here is my fruit+vegetable blend. A simple recipe, this is a great drink to enjoy on the go. The flavour is mellow fruity with the hint of the carrot taste in the end. It is soothing, light and can be enjoyed on its own as a hearty breakfast or combine with a side snack of granola bar for those 4 pm hunger pangs. I have even used this as a base for a layered oats, muesli parfait and it tastes great !

Recipe

  •  4 -5 cubes of ice
  • 1/2 apple (medium sized), diced (with peels)
  • 2 carrots, cut into bite sized chunks
  • 1 glass of milk/low fat yogurt
  • 1/2 cup strawberry , fresh or frozen
  • 1/2 cup raspberry, fresh or frozen
  • 1/2 cup Mango chunks or 2 tablespoons mango puree (to bring in sweetness to the smoothie. You can also use pineapple here)
  • 1 tsp flax seeds, grounded (optional). I just add this to sneak in the benefits of flax seeds

Note : If u are using frozen fruits for this smoothie, omit the ice from the recipe and instead add 1/2 water or coconut water.

Method

  1. Start with crushing ice to a snow like consistency. If u are using frozen fruits, add them in the first step with a little milk/water or coconut water and give it a blend.
  2. Next, add in the other hard ingredients like carrots and apple and blend them.
  3. Finally add in the mango/pineapple and blend. Serve with flax seed powder on top.

You may also add a little honey on top in case the smoothie feels less sweet.

This is as simple as a smoothie recipe goes. It tastes fresh and refreshing.. best to enjoy after a hearty workout or a long walk !
