This is a short but not so sweet a post. This is going to be one hot, spicy and totally lip smacking ride along the Mexican borders. I recently made a day trip to some of the authentic Mexican stores around here in San Diego and picked up a few interesting things. This is my authentic salsa recipe with Chipotle and Guajillo chilies.
Lately i have been very curious about Mexican cuisine. Clearly, San Diego is a perfect place to acquire inspiration for Mexican food with the plethora of eateries offering the most local and authentic Mexican dishes for us to try. I have been lucky to make a couple of Mexican friends here and they recently took me to shops from where they get their authentic Mexican produce.
As soon as i entered the shop, the first and the most striking thing to my eyes was a long row of packets with all sorts of chilies i could possibly think of. So far, i thought only Indians loved their chilies but oh my, was i wrong. This shop had such interesting things to offer that i found myself jumping around in excitement. My Mexican friend showed me around different ingredients and i kept picking up stuff without having a clue of what i would make of it. By the time i was home, i had 5-6 packets of unknown varieties of chilies, a few unknown cheeses and fresh from the factory, tortillas ! What a blissful day !
Today, i took out the chilies and called my friend to ask what i should be making with them. She gave me a couple of options and i decided to make some Hot ‘n’ zesty Salsa for me. This recipe is partially inspired by her method and some of my tweaks. The result is A.M.A.Z.I.N.G !
Chipotle Guajillo Salsa
Chipotle Guajillo Salsa
- 7-8 Guajillo Chilies
- 2-3 Arbol chilies (Add more if u like your salsa hotter)
- 1 chipotle chili in adobo sauce
- 2 ripe tomatoes
- 2 tomatillos (optional but desirable to get that authentic flavour)
- 2-3 cloves of Garlic
- handful of fresh coriander, chopped
- salt to taste
- pepper to taste
- juice of half lemon
- 1 tsp vinegar (optional)
- water required for Salsa
Method
- take 2 cups of water. To this, add in washed Gaujillo chilies, Arbol chilies and Tomatoes. Let the water boil. Once boiled, shut the flame and let cool down.
- Now, in a blender, put the tomatoes and chilies and pulse till chunky. Do not add all the boiled water in the blender or else the salsa will become too runny.
- Next, add in the garlic, chipotle chilies, coriander, salt, pepper and more water as required. I like the salsa a bit smoother so i pulsed it more.
- Remove in a serving bowl. Add in lemon and vinegar to this and mix well. Salsa is ready.
- Enjoy with Nachos, Burritos or wraps !
Mmmm… this is just delicioso ! The different chilis lend a beautiful color, aroma and flavour to this hot ‘n’ Spicy Salsa. I served these with home made Nachos dish (recipe here) and it was a brilliant combination. Later that week i made a fresh batch of this Salsa for Sopes (recipe coming soon), an authentic mexican dish. This Salsa has become my everyday condiment now and i enjoy with just about anything and everything. Try it and fall in Love !
