I love the smell of freshly baked goods. Not only does that make my kitchen smell like a wonderland, the joy of seeing the final results coming out from the oven fills my heart with great sense of achievement and pleasure.
This recipe is a charming savory addition to my ‘baking bread basket’.
I started my journey of bread baking with making a simple Wheat bread (which came out pretty nice. Check the recipe here.). The first bread success boosted my confidence and i went ahead with pizza base and pav which also turned out great. To try out something new and interesting, I decided to make a savory flavored bread.
The flavor of golden onion really adds a dimension to this recipe. The bread is mild enough to work well for sandwiches, garlic breads and as pav (for Pav bhaji, see the recipe here), and is also great when toasted and eaten with butter on top.
GOLDEN ONION BREAD
Golden Onion Bread
This Recipe is an Onion flavored bread. The method remains similar to the basic bread recipe. Find the Recipe for Basic Bread here.
For Bread
- 2 cups All purpose flour/ Wheat flour
- 50 gms butter –softened (you can also use vegetable oil though i prefer butter for baking goods)
- 1 tsp active dried yeast
- 1/2 tsp salt
- 2 tsp sugar
- 2/3 cup warm water
- 1/2 cup spring onion green portion – finely chopped
For Golden Onions
- 1 large onion – finely chopped or thin sliced
- 1 bunch spring onion white portion – finely chopped
- 2 tbsp olive oil
- salt to taste
Method
- In a bowl, take about 1/4 th cup warm water (warm to boiling water). To this, add the sugar and add the dry active yeast. Stir and allow the yeast to froth.
- While the yeast rests to activate, prepare the golden onion mixture. In a pan, add olive oil and bring to heat. Add the chopped onion, spring onions and salt and let it cook on medium high flame till the onions get translucent and start to get golden brown.Remove from flame and keep aside.
- Now, take a big bowl and sieve in flour and add salt and butter to this. Add in the golden onion mixture & yeast mixture to the flour. Also, add 1/3 cup of spring onion greens and warm water to form a soft dough.
- Place this dough in a well oiled deep bowl and cover the bowl with clear film. Let it stand for about 1 hour. The dough will rise to double the size.
- Remove the clear film and punch down the dough. Knead for a couple of minutes. With a rolling pin, roll out the dough to about a thickness of 3/4 inch thick in a rectangular shape (add the flour on the working surface to knead out the dough).
- Roll the dough sheet to form a bread loaf. Place in greased loaf tin. Sprinkle the left over spring onion greens on top of the bread and push it inside the bread a little with the help of your fingers.
- Cover with clear film and let it rest and rise for about 45 minutes. Make sure the tin is deep enough that the dough is placed till about half the depth of the tin as the dough is rise to double the volume when left for rising.
- Bake at 375 F for about 40 minutes or till golden brown.
- Remove from oven and let it cool down completely before cutting into slices. You can also brush the bread top with softened butter at this moment for a beautiful sheen on the bread.
This Bread is beautiful inside out. Not only is the golden onion bread a beautiful example of baked beauty, the aroma and flavor is so interesting that this bread becomes a clear winner on your breakfast table.

I am HOPELESS at kneading – simply hopeless. I have NO IDEA what I’m doing, and I need to see somebody who does know how to doing the kneading.

I just found something which might be useful for u … it is definitely not mine but the techniques is very similar to mine. There are three videos on that site describing the whole process.
P.S – the video is for making All purpose flour bread so the dough is more elastic in nature. The whole wheat takes a little more rough handling as there is less gluten in it. Also, i knead the dough entirely by hand. I don;t use a dough whisk.
